Ingredients

Serves: 2 people

  • 50 g Creme Fraiche
  • 1 - Green Pepper
    deseeded & chopped
  • 1 tbsp Rapeseed Oil
  • 1 - Red Pepper
    deseeded & chopped
  • 3 tbsp Sundried Tomato Pesto
  • 250 g Turkey Breast
    sliced into 1cm strips
  • 100 g Wholewheat Spaghetti
  • 1 - Yellow Pepper
    deseeded & chopped

Method

  1. Place spaghetti in a large pot full of boiling water and simmer until cooked for 10-15 minutes.
  2. Place oil in a large pan on medium to high heat.  Add the turkey and sauté for 4 - 5 minutes until fully cooked.
  3. Turn the hob heat down to medium heat and add light cream cheese, pesto and vegetables.  Sauté for a further 10 -15 minutes until turkey is cooked through and vegetables are tender.
  4. Once spaghetti is cooked, drain and serve with turkey mixture.
