Be careful to not agitate the burgers too much on the barbecue as the mixture is fragile and can break into the ashes!

Method
In a large bowl, combine the turkey mince, half of the grated courgette, chopped spring onions, egg, cornflour, garlic, shallot, herbs, spices and seasoning until fully combined. Shape the mixture with dampened hands into burger patties.
Preheat the barbecue or griddle pan to medium heat.
In the meantime, in a large pan, over high heat, drizzle 1 tbsp of olive oil and add the rest of the grated courgette. Cook rapidly over high heat for 2 minutes until just soften. Season with salt, pepper and lemon zest. Remove from the heat into a small bowl to cool.
When cooled, add the yogurt, spring onions, the lemon juice, extra virgin olive oil. Stir and check seasoning. Keep aside until serving.
Place the cooled burger on the barbecue and grill 4-6 minutes on each side until cooked through.
Serve warm with lemon yogurt sauce on the side or on the buns and some rocket leaves.
