Slow-Cooked Red Cabbage with Star Anise and Apples

Ingredients

  • 0 - Black Pepper
  • 20 g Butter
  • 1 - Cinnamon Stick
  • 70 g Muscovado Sugar
  • 1 tbsp Olive Oil
  • 50 g Raisins
  • 100 ml Red Wine
  • 40 ml Red Wine Vinegar
  • 3 - Shallots diced
  • 2 - SuperValu Pink Lady Apples chopped
  • 0.5 head SuperValu Red Cabbage cored and shredded
  • 0 - SuperValu Salt
  • 2 - SuperValu Star Anise

Method

  1. Heat the butter and oil in a saucepan over a medium heat. Add the shredded cabbage and shallots and sauté for about 5 minutes, until they have slightly softened.
  2. Add the rest of the ingredients and season with salt and pepper. Cover the pan with a lid and cook for 2 to 3 hours over a very low heat. Remove the star anise and cinnamon stick before serving.
