Singapore Noodles

RECIPE OVERVIEW

Operation Transformation Recipe - This standard Chinese restaurant dish is a quick fix dinner that packs a flavour punch! 

Preparation time: 3 minutes

Cooking time: 15 minutes

Ingredients

Serves: 2 people

  • 225 g Beansprouts
  • 2 - Chicken Breast
    sliced into strips
  • 1 tsp Chilli Powder
    (optional)
  • 1 tbsp Fish Sauce
  • 1 clove Garlic
    crushed
  • 1 tbsp Honey
  • 1 - Lime
    juice
  • 250 g Mushrooms
    sliced
  • 1 tbsp Rapeseed Oil
  • 1 - Red Pepper
    deseeded and chopped
  • 3 tbsp Soy Sauce
    reduced sodium
  • 100 g Wholewheat Noodles

Method

  1. Place noodles in a pot of boiling water and simmer for approximately 5 minutes until soft
  2. In a bowl mix together the soy sauce, honey, fish sauce and lime juice to make the marinade
  3. Add the chicken strips to the bowl and cover with the marinade
  4. Add one tablespoon of rapeseed oil to a pan on medium/high heat
  5. Add the crushed garlic and stir for a couple of minutes
  6. Add the sliced mushrooms, pepper and beansprouts to the pan
  7. Add marinated chicken to the pan
  8. Stir in the cooked noodles and cook through for approximately 5-8 minutes
