Streaky bacon and turkey bombe with stuffing

Ingredients

Serves: 4 people

Sausage meat, apricot and sumac stuffing
  • 1 pinch Black Pepper
  • 50 g Dried Apricots
    chopped
  • 1 clove Garlic
    crushed
  • 1 tsp Lemon
    zest with black pepper (sumac can be used alternatively)
  • 1 pinch Salt
  • 1 - Shallots
    finely diced
  • 1 tbsp SuperValu Fresh Parsley Flat Leaf
    chopped
  • 1 - SuperValu Orange
    zest only
  • 100 g Superquinn Award Winning Irish Sausages
    meat only
Sausage meat, cranberry and chilli stuffing
  • 100 g Fresh Cranberries
  • 1 - Onion
    finely chopped
  • 1 - SuperValu Chillies
    red, deseeded and chopped
  • 50 g SuperValu Fresh Breadcrumbs
  • 1 - SuperValu Granny Smith Apples
    peeled and finely diced
  • 2 tsp SuperValu Tomato Purée
  • 100 g Superquinn Award Winning Irish Sausages
    meat only
Sausage meat, sage and onion stuffing
  • 2 - Onions
    finely chopped
  • 100 g SuperValu Fresh Breadcrumbs
  • 2 tbsp SuperValu Fresh Parsley Flat Leaf
    chopped
  • 4 tbsp SuperValu Fresh Sage
    finely sliced
  • 100 g Superquinn Award Winning Irish Sausages
    meat only

Method

  1. Place all the ingredients in a large bowl. Using your hands, combine everything together.
  2. Use as indicated in the maple streaky bacon and turkey bombe recipe. Alternatively, you could place the stuffing in the cavity of a turkey and cook as per instructions or place the stuffing in a baking tin, cover with foil and cook for 25 to 30 minutes.
