No Chop Prawn Stir Fry Recipe

Operation Transformation Recipe - A quick, easy and healthy prawn stir-fry to replace your takeaway.

Cooking time: 40 minutes

Ingredients

Serves: 2 people

  • 2 cloves Garlic
    crushed
  • 100 g Green Beans
  • 12 - Mushrooms
    (button)
  • 1 tbsp Rapeseed Oil
  • 1 tbsp Soy Sauce
    (reduced sodium)
  • 160 g SuperValu Prawns
    uncooked
  • 120 g Sweetcorn
  • 100 g Wholegrain Rice

Method

  1. Add the wholegrain rice to a pot of boiling water and cook for approximately 40 minutes
  2. Heat the rapeseed oil in a frying pan over a medium heat and fry the prawns for 5-6 minutes until they turn from grey to pink
  3. Add the crushed garlic to the pan and fry for 2-3 minutes, stirring all the time
  4. Add the sweet corn, green beans & mushrooms and continue frying for a further 2-3 minutes
  5. Add the soy sauce and cook the stir fry for a further 5 minutes stirring through
  6. Serve the rice topped with the prawn stir fry
