  1. Place 1 tsp of oil in a skillet over medium heat.
  2. Add diced potato and peppers stirring for 8 - 10 minutes.
  3. In a bowl whisk the eggs, salt, chopped tomatoes and grated cheese.
  4. Add the egg mixture to the pan cooking until the edges are cooked and put under a hot grill for a few minutes until it’s fully cooked through.
  5. Top with spinach and serve.
