400gSuperValu Beans

diced into small pieces the size of a stock cube

ripe, chopped into small pieces

Method
If you’re using dried beans, soak them for at least 8 hours in a large bowl of cold water, then drain.
Heat the oil in a large heavy-based pot. Once it starts to smoke, add the lamb pieces, turmeric and salt. Cook for 1 minute, then add the beans. Stir and cook for 1 minute more, until the beans are well mixed with the lamb, then add the tomatoes and garam masala. Cook for another minute or two, until the tomatoes are soft.
Add 3 mugs of boiling water, cover the pot and cook for 40 to 50 minutes on a medium heat, until the beans are fully cooked and soft if you’re using dried beans.
Once the dish is cooked, add the ginger and a little more water to ensure the dish has a stew consistency. Garnish with fresh coriander and serve.
