RECIPE OVERVIEW

Operation Transformation Recipe - Homemade meatballs and spaghetti recipe that will bring the whole family to the table.

Cooking time: 20 minutes

Ingredients

Serves: 2 people

  • 1 small Fresh Egg
  • 1 - Green Pepper
    chopped
  • 250 g Lean Round Steak Mince
  • 0.5 - Onion
    minced
  • 1 tbsp Rapeseed Oil
  • 1 - Red Pepper
    chopped
  • 10 g SuperValu Fresh Breadcrumbs
  • 0.5 tbsp Water
  • 100 g Wholewheat Spaghetti
For the Sauce
  • 0.5 tsp Chilli Powder
  • 75 g Chopped Tomatoes
    canned
  • 1 clove Garlic
    crushed
  • 0.25 tsp Salt
  • 10 g SuperValu Fresh Basil
    chopped
  • 1 tbsp SuperValu Tomato Purée
  • 100 g Tomatoes
    fresh, chopped

Method

  1. Place spaghetti in a large pot full of boiling water. Turn down heat and allow to simmer for 10-15 minutes until pasta is tender.  
  2. In a bowl combine beef mince, egg, onions, water,  and breadcrumbs.
  3. Roll the mixture into 6 balls and set aside.
  4. Place half the oil in a pan over medium - high heat.  Once the pan is hot add the meatballs and cook for 1- 2 minutes until browned.
  5. Place a large pot on a medium heat.  Add oil.  Then add crushed garlic, stirring until soft.
  6. Now add tomatoes, tomato puree, canned tomatoes, salt, basil and chilli powder. Mix together.
  7. Add the chopped red and green peppers and stir.
  8. Simmer over a medium heat for 5 - 10 minutes until tomatoes are soft and then combine with cooked meatballs.
