Lentil, Mushroom and Sweet Potato One Pot Pie

Ingredients

For the lentil and mushroom mix

  • 8 - Banana Shallots peeled and halved
  • 2 - Bay Leaves
  • 2 tbsp Bisto Gravy Granules Range 170g
  • 1 - Black Pepper
  • 50 ml Brandy
  • 3 - Carrots peeled and chopped
  • 2 cloves Garlic peeled and minced
  • 250 g Green Lentils
  • 1.2 kg Mushroom Mix roughly chopped
  • 15 g Porcini Mushrooms
  • 1 - Red Onion finely chopped
  • 1 - Salt
  • 3 sprigs SuperValu Fresh Thyme
  • 3 tbsp Tomato Ketchup
  • 50 g Tomato Puree
  • 375 ml Vegan Red Wine dry
  • 250 ml Vegetable Stock

For the sweet potato mash

  • 1 - Black Pepper
  • 2 tbsp Dairy Free Butter
  • 8 cloves Garlic peeled
  • 2 tbsp Maple Syrup
  • 1 pinch Nutmeg
  • 50 ml Oat Milk
  • 1 - Olive Oil
  • 1 - Salt
  • 5 sprigs SuperValu Fresh Rosemary
  • 2 sprigs SuperValu Fresh Thyme
  • 6 - Sweet Potatoes peeled and cubed
  • 1 tbsp Vegan Mayonnaise

To serve

  • 1 tbsp SuperValu Chilli Flakes
  • 1 - SuperValu Fresh Parsley

Method

FOR THE MUSHROOM AND LENTIL MIX 

  1. Place the dried lentils into a pot on a high heat and top with water. Bring to the boil and reduce to a simmer. Leave for 30 minutes or as per packet instructions. Drain the cooked lentils and set aside. 
  2. Place the dried porcini mushrooms in a bowl and cover with hot water. Drain once rehydrated 
  3. Add the red onion, garlic, carrots, shallots and brandy to a large heated and oiled pan and sauté for 10 minutes. 
  4. Add in the mushrooms, rehydrated porcini mushrooms, vegetable stock, bay leaves and thymeCover and leave for 15 minutes until the mushrooms have steamed through and begin to reduceAdd the cooked lentils, Bisto granules, ketchup, tomato paste and wine and bring to the boil and reduce to a simmer. 
  5. Leave the pot on a low heat for at least 2 to 4 hours, stirring occasionallyIdeally cook this the night before for maximum flavour.   
  6. Season liberally with salt and pepper.
     

FOR THE SWEET POTATO MASH 

  1. Preheat oven to 220°C. 
  2. Place the sweet potatoes onto a large tray and top with the fresh rosemary, thyme and garlic cloves. Season with salt, pepper, maple syrup and olive oilPlace the tray into the oven for approximately 45 minutes or until tender. Once tender, remove the tray from the oven and discard the larger rosemary and thyme sprigs 
  3. Place the sweet potato and roasted garlic cloves into a food processor and add in the vegan mayonnaise, butter, milk, salt, pepper and nutmegBlitz to a smooth consistency and adjust seasoning as desired. 

TO SERVE 

  1. Preheat the oven to 180°C. 
  2. Remove the sprigs of thyme and bay leaves from the mushroom mix and spoon the mix into a large ovenproof dishTop with the sweet potato mash. 
  3. Place in the oven for 15 to 20 minutes, until golden brown and bubbling. 
  4. Serve with a side of green beans or vegetables and dress the pie with chilli flakes and fresh parsley.
