Goats cheese croquettes

Ingredients

Serves: 4 people

  • 1 pinch Black Pepper
  • 0.5 tsp Chinese 5 Spice
  • 50 g Chutney
    to serve
  • 6 - Dried Apricots
    chopped
  • 1 - Fresh Egg
    beaten
  • 50 g Plain Flour
  • 1 pinch Salt
  • 100 g SuperValu Fresh Breadcrumbs
  • 120 g SuperValu Goats Cheese

Method

  1. Combine the goats’ cheese, chopped apricots and some freshly ground black pepper in a bowl.
  2. Prepare three separate shallow bowls: the flour in the first bowl, the beaten egg in the second bowl and the breadcrumbs seasoned with the five-spice powder, salt and pepper in the third bowl.
  3. Roll the goats’ cheese mixture into walnut-sized balls. Coat them in the flour, then the egg and then the breadcrumbs.
  4. Preheat the fryer to 180°C. Once the oil has reached the required temperature, place the cheese croquettes into the basket and lower them into the oil. Cook for 1 to 2 minutes, until golden. Add a cocktail stick and serve with some mango chutney
