Dinner burrittos

RECIPE OVERVIEW

During school term, easy dinners that can be served up in less than 30 minutes are essential for staying on a tight activity schedule. Add exciting flavours to the menu with Siúcra x Catherine Fulvio’s Dinner Burritos, which are guaranteed to keep everyone happy and excited for meal time, making the schedule a little easier one step at a time.

Preparation time: 20 minutes

Cooking time: 30 minutes

Ingredients

Serves: 4 people

  • 8 - Soft Flour Tortillas
For the beef filling
  • 1 pinch Black Pepper
  • 1 medium Carrots
    grated
  • 200 g Chopped Tomatoes
  • 3 cloves Garlic
    finely chopped
  • 200 g Kidney Beans
    cooked
  • 1 - Onions
    chopped
  • 0.5 tsp Paprika
  • 1 pinch Salt
  • 1 tbsp Siúcra Golden Granulated Sugar
  • 300 g SuperValu Fresh Irish Beef Mince
  • 100 ml Vegetable Stock
  • 1 tbsp Worcestershire Sauce
For the guacamole
  • 1 pinch Black Pepper
  • 2 - Lime
    juice only
  • 0.5 - Red Chilli
    finely chopped (optional)
  • 0.5 - Red Onion
    finely chopped
  • 1 pinch Salt
  • 2 - SuperValu Avocado
    peeled and stone removed
For the relish
  • 1 pinch Black Pepper
  • 1 tbsp Olive Oil
  • 2 medium Red Onion
    sliced
  • 3 tbsp Red Wine Vinegar
  • 1 pinch Salt
  • 2 tbsp Siúcra Golden Granulated Sugar
to serve
  • 1 cup Cheddar Cheese
    grated
  • 1 cup Chopped Tomatoes
  • 1 handfull Lettuce leaves
  • 8 wedges Lime

Method

To prepare the beef filling

Heat a saucepan with a little oil and add the onion, sauté for 5 minutes before adding the garlic and paprika. Add the minced beef and brown.
Stir in the grated or chopped carrot, Siúcra Golden Granulated Sugar, Worcestershire sauce, and season with salt and freshly ground black pepper.
Pour in the tomatoes, vegetable stock and black beans, simmer for 20 minutes, stirring from time to time.


To prepare the relish

Combine all the ingredients in a small bowl and mix very well.


To make the guacamole

Place the avocado into a bowl, add the lime juice, chopped red chilli (heat level dependant!) and red onion.  Mash / mix this very well until textured.


To assemble

Warm the tortillas, spoon the beef filling onto each tortilla, add the toppings of your choice, fold in the sides and roll up.
