Created by Derval O'Rourke, Quinoa-based salads are a great lunch option. The blue cheese adds something special to this salad and compliments the other ingredients really well.

Serves: 1 person

  • 25 g Blue Cheese
  • 1 handfull Fresh Blueberries
  • 1 tbsp Natural Yogurt
  • 1 tbsp Pomegranate seeds to garnish
  • 125 g Quinoa
  • 1 - Salad Greens
    / raw vegetables
  • 1 handfull SuperValu Fresh Mint
    roughly chopped
  • 0.5 - SuperValu Lime
    juice only
  • 0.5 tbsp SuperValu Olive Oil
  • 1 tbsp SuperValu Pine Nuts
    /cashews or flaked almonds
  • 1 pinch SuperValu Salt


Place all of the ingredients, except for the natural yogurt, in a serving bowl and mix well. Serve the natural yogurt in a small pot on the side.
