Crostini with Smoked Salmon, Dill & Cucumber

Crostini is the Italian for small toasts, and makes a delightful canapé. You can top with your favourite toppings, of prawns, olives or just cream cheese.

Ingredients

Serves: 4 people

  • 150 g Cream Cheese
  • 1 tbsp Rapeseed Oil
  • 1 - SuperValu Baguette
    very thinly sliced (5mm)
  • 1 - SuperValu Cucumber
    thinly sliced
  • 1 tbsp SuperValu Fresh Dill
  • 1 - SuperValu Lemon
    juice & rind
  • 225 g SuperValu Smoked Salmon

Method

  1. Lay the thinly sliced bread onto a baking tray and drizzle with a little oil.
  2. Place into a preheated oven for 4-6 minutes until crisp.
  3. In the meantime, place the cream cheese, lemon rind and dill into a bowl, stir to combine. Slice the smoked salmon into strips.
  4. Once the Crostini are removed from the oven allow to cool for a minute or two, then smear with a little cream cheese and top with a slice of cucumber and salmon.
