Chicken pesto pasta recipe


Operation Transformation Recipe - A light, creamy pasta dish. Serve with wholewheat pasta.

Preparation time: 10 minutes

Cooking time: 20 minutes


Serves: 2 people

  • 2 - Chicken Fillets
  • 2 cloves Garlic
  • 1 tbsp Light Cream Cheese
  • 1 - Red Pepper
    deseeded and chopped
  • 1 tbsp SuperValu Basil Pesto
  • 100 g Wholewheat Pasta
    any shape
  • 1 - Yellow Pepper
    deseeded and chopped


  1. Place wholewheat pasta in a pot of boiling water and cook for approximately 9-10 minutes until soft.
  2. Cut chicken fillets into strips.
  3. Place tablespoon of rapeseed oil in a wok / pan and add chicken strips. Cook until cooked through for approximately 6-8 minutes.
  4. Reduce heat and add basil pesto to the chicken, add cream cheese and stir through.
  5. Allow cream cheese to melt making a creamy sauce.
  6. Add sliced peppers and stir for a few minutes until tender.
  7. Serve pesto chicken mixture with wholewheat pasta.

    I made this tonight for dinner and it was amazing. I halved the ingredients because it was only going to be myself at home this evening. I only had a red pepper handy so i used half it. I dont think it wouldve been necessary to use a yellow pepper also.
    The ingredients were inexpensive and the preparation and cooking time were quick. I would recommend this dish to everyone.
