Caprese salad recipe

Ingredients

Serves: 1 person

  • 90 g Cherry Tomatoes
    halved
  • 0.25 - Lemon
    juiced
  • 20 g Mozzarella Cheese Balls
  • 20 g Natural Yogurt
    3% fat
  • 1 handfull SuperValu Fresh Basil
  • 1 tsp SuperValu Pesto
  • 30 g Wholewheat Penne Pasta

Method

  1. Add the pasta to a pot of water. Bring to boil and simmer until cooked. Drain and rinse in cold water.
  2. In a bowl mix the yogurt, lemon juice and pesto.
  3. Combine the mozzarella, chopped tomatoes, basil and cooked pasta.
  4. Drizzle with dressing.
