Beef Satay

RECIPE OVERVIEW

Operation Transformation Recipe - Using yesterday's leftover Beef, try out this healthy Beef Satay recipe with wholegrain rice

Preparation time: 2 minutes

Cooking time: 40 minutes

Ingredients

Serves: 2 people

  • 0.5 - Beef Stock
    added to 200mls water
  • 1 tsp Hot Sauce
  • 1 small Onion
    chopped
  • 1 tbsp Peanut Butter
    crunchy
  • 1 - Red Pepper
    deseeded and chopped
  • 250 g Roast Beef
    (leftovers from last night’s dinner)
  • 1 tsp Soy Sauce
    reduced sodium
  • 150 g SuperValu Bean Sprouts
  • 100 g Wholegrain Rice

Method

  1. Place wholegrain rice in a pot of boiling water and cook for approximatley 40 minutes until soft
  2. In a bowl combine the beef stock, peanut butter, soy sauce and hot sauce to make satay sauce
  3. Add satay sauce along with beef to a deep pan along with bean sprouts, chopped red pepper and chopped onion
  4. Simmer until vegetables are tender and serve with the wholegrain rice
