Siobhan apple apricot compote


Take your cheese sambo to a whole new level by adding this apple and apricot compote as a relish.

  1. Put the apples and apricots in a pan and drizzle with a
    little water. Bring to the boil, then reduce the heat, cover
    the pan and simmer for about 5 minutes, until the fruit
    has softened. Allow to cool before blending to a fairly
    smooth purée.
