Pea, Mint and Feta Dip

Dips are ideal for busy parents and for kids who like the fun element of eating them, either with raw vegetables or spread over crackers or toasted bread. Plus dips are incredibly easy to prepare and are both nutritious and inexpensive. If you have any left over, they can even be used as sauces for pasta, rice or couscous.

Ingredients

  • 1 pinch Black Pepper
  • 250 g Frozen Peas
  • 1 pinch Salt
  • 1 drop SuperValu Extra Virgin Olive Oil
  • 100 g SuperValu Feta Cheese finely crumbled
  • 15 g SuperValu Fresh Mint leaves stripped

Method

  1. Fill a large pot with salted water and bring to the boil. Add the frozen peas and cook for 1 minute, until tender. Drain but keep a small amount of the cooking water.
  2. Rinse the peas with cold water, then place them in a food processor or blender with the mint leaves, olive oil and some salt and pepper and blend until well combined. If the dip is too thick, then add the reserved cooking water. Transfer the dip to a serving bowl and stir in the crumbled feta cheese.
