Operation Transformation Recipe

Ingredients

Serves: 2 people

  • 100 g Beetroot
    sliced
  • 150 g Cucumber
    sliced
  • 1 - Red Pepper
    chopped
  • 300 g Salad Greens
  • 120 g SuperValu Goats Cheese
    crumbled
  • 150 g Tomatoes
    chopped
  • 100 g Wholegrain Rice

Method

  1. Place the rice in a pot of boiling water and cook until light and fluffy.
  2. Once cooked place on plate or salad bowl.
  3. Wash and dry salad greens and tomatoes. 
  4. In a large bowl combine the salad greens, peppers, cucumber and tomatoes.
  5. Place salad mixture on top of rice.
  6. Now layer the crumbled/cubed goats cheese and beetroot.
