DINGLE GIN MOJITO
Serves 1

Distilled with wild botanicals from their own locality in Co. Kerry,
Dingle Gin has an incredible balance of the herbal and fl oral tastes
of Munster. When your thermometer is on an upward trajectory,
this cocktail is a fantastic thirst quencher. The recipe is for one
serve, but multiply the ingredients accordingly if you have guests.

1 lime Juice half the lime and thinly slice
1 teaspoon caster sugar the other half. Stir the lime juice
6 fresh mint leaves, and sugar in a long glass until
combined. Drop in the mint leaves
plus an extra sprig to garnish and lightly press them with the
35ml Dingle Irish Gin back of a spoon. Pour in the gin
ice, to serve and fi ll the glass with ice. Add the
3 cucumber slices cucumber and lime slices and top
50ml sparkling water up with sparkling water. Garnish
with a fresh mint sprig.
