                   Coriander pesto penne with
                                oranges
                                   SERVES 4


                   500g wholemeal penne
                   2 small oranges, peeled and cut into bite-sized pieces

                   FOR THE PESTO

                   100g cashew nuts, toasted on a dry pan until golden  Homemade pesto is very easy to make
                   50g fresh coriander, including stalks       and always good to have in the fridge.

                   everything is hot. Stir the orange pieces through the
                   pasta and serve straight away.
