Coriander pesto penne with
oranges
SERVES 4
500g wholemeal penne
2 small oranges, peeled and cut into bite-sized pieces
FOR THE PESTO

50g fresh coriander, including stalks and always good to have in the fridge.

½ lime, juice only either love it or hate it. If you are one of
1 to 1½ teaspoons salt the haters, simply substitute with basil.

Peel the garlic and put it in a blender with the rest of with pink peppercorns and chilli akes.

Cook the pasta in a large pot of boiling salted water
as per the packet instructions, which is normally 10
to 12 minutes. Drain and rinse.
Put the drained pasta back in the same pot along
with the pesto and stir together until well mixed and
everything is hot. Stir the orange pieces through the
pasta and serve straight away.
