              Re-Gifting



             Put that bottle of Christmas
             whiskey to perfect use with
             this medley of Irish staples.








                                                                     COOPER’S TEA
                                                                         SERVES 10 TO 12
                                             1 jar of honey             Pour the honey into a 1-litre Kilner jar, then fill the jar with
                                             1 jar of boiling water     boiling water. Add the tea bags and the lemon zest and
                                             8 Barry’s tea bags         juice. Seal the jar and shake it for 10 seconds, then leave for
                                             3 lemons, zest and juice   1 hour. In the meantime, slice the cucumber and let it sit
                                             1 cucumber                 in a punch bowl with the whiskey and apple juice. After 1
                                             1 bottle of Jameson Irish Whiskey  hour, strain the Kilner jar into the punch bowl and stir. Add
                                             1 litre pressed Irish apple juice  the mint leaves. To serve, fill a tumbler glass with ice and
                                             6 fresh mint sprigs        top up with the cooper’s tea.
