                                                                  Chunky Moroccan harira soup

                                                                                   SERVES 6

                                                            5 carrots, thinly sliced     Put 3 or 4 tablespoons of water
                                                            1 onion, fi nely chopped      in a large family-sized pan on a
                                                            5 garlic cloves, fi nely chopped  medium heat, then stir in the carrots,
                                                            2 teaspoons salt             onion, garlic and salt. Cover with

                                                            2.5 litres vegetable stock or water  aren’t done yet, let the soup simmer
                                                            1 bunch of fresh fl at-leaf parsley, chopped
                                                                                         for a bit longer, adding a little
                                                                                         more water if necessary. Taste and
                                                                                         season with more salt and pepper if
                                                                                         necessary. Just before serving, stir in
                                                                                         the parsley, then ladle into bowls.
