Biscotti
with babyccino
Weaning tip MAKES 10
Biscotti are great for your
teething baby and are perfect for 130g plain flour
a snack while out and about. 100g wholemeal flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
2 eggs, lightly beaten
1 egg yolk
1 tablespoon milk
warm frothy milk, to serve
Preheat the oven to 180°C/gas
mark 4. Line a baking tray with
non-stick baking paper.
Mix together all the dry
ingredients in a large bowl.
Slowly add the beaten eggs and
mix again until a dough starts
to form.
Split the dough into two equal
pieces and shape into two logs
on the lined baking tray. Mix the
egg yolk and the milk together,
then use a pastry brush to glaze
the logs with this egg wash.
Bake in the oven for 20 to 25
minutes, until golden brown.
Remove from the oven and
allow to cool for 5 to 6 minutes
before slicing into 2cm-thick
biscotti.
Place the biscotti back on the
baking tray, lower the oven
temperature to 160°C/gas mark
3 and bake for a further 15 to 20
minutes, until the biscotti have
dried out and are golden brown.
Remove from the oven and
place on a wire rack to cool.
Serve with a small mug of warm
frothy milk as a babyccino.
Store any leftovers in an airtight
container.
