Corned Chicken Goujonsorned Chicken Goujons

                                                    Ingredients

                                                    Serves 4-6
                                                    4 chicken breasts, off the bone and skin
                                                    4 chicken breasts, off the bone and skin
                                                    removed, cut into even sized strips
                                                    50g plain gluten free flour
                                                    3 medium eggs, beaten
                                                    50g NESTLÉ  GOFREE
                                                               ®
                                                                        ®
                                                    Corn Flakes, crumb
                                                    ½ tsp. cayenne pepper (optional)
                                                    Freshly ground black pepper, to taste
                  For Illustrative                  2 tbsp. vegetable oil/sunflower or

              This recipe is quite handy for parties. the chicken can be prepared
              in advance and as the goujons are baked in the oven it cuts out
              a lot of mess during the party.
              Method

              Preheat the oven to 190 °C / 375 °F / gas mark 5.

              Drizzle 1 tbsp. of oil over two baking trays and place in the oven.
              Prepare the chicken, removing the skin and cutting into thin long even sized strips.

              Place the gluten free flour in another shallow bowl.  Place the beaten egg into another bowl.
              Mix the NESTLÉ  GOFREE  Corn Flakes and cayenne pepper in a shallow bowl.

              Season to taste with freshly ground black pepper.

              Dip the chicken pieces in gluten free flour, then into the beaten egg and finally coat in the

              NESTLÉ  GOFREE  Corn Flakes shaking off the excess at each stage.
                              ®
              Remove the hot baking tray from the oven, and lay the chicken goujons on the hot baking tray
              if cooking immediately, otherwise place the chicken on a flat tray and cover with cling film,
              refrigerate until required.

              Drizzle the goujons all over with the remainder of the oil.
              Bake in a preheated oven 190 °C / 375 °F / gas mark 5, for 30 minutes, turning once.
              Remove from the oven when completely cooked through, cut one in the centre to make sure
              there is no pink, and the coating should be golden-brown all over.
