Siobhan Berry saves tons of kitchen time with
a wealth of grown-up uses for humble baby
purées and stewed fruits. Just rename the purée
as compote for the grown-ups!
Apple and apricot compote
MAKES 6 SMALL PORTIONS
2small apples, peeled, cored and chopped
2fresh ripe apricots, peeled and stoned
Put the apples and apricots in a pan and drizzle with a
little water. Bring to the boil, then reduce the heat, cover
the pan and simmer for about 5 minutes, until the fruit
has softened. Allow to cool before blending to a fairly
smooth purée.
HEALTHY BABY TIP A VERY GROWN-UP SAMBO
You can also use dried apricots Take your cheese sambo to a whole new
instead of fresh. Just soak them level by adding this apple and apricot
in hot water for 1 hour and use compote as a relish.
