The ham matched
with luscious and
opulent white wines
The ham is a meat with two acts:
the luscious interior and the crispy,
caramelised exterior. The matching
wines must have personalities big
enough to do the ham justice. For this
we need to bring out the muscular
blends of the white wine world that are
happy to meet a great dish head on.
SEMILLON AND
SAUVIGNON BLANC
In Bordeaux the Cazes family,
owners of the Irish-founded
Château Lynch-Bages, have
a variety of side projects.
One is their Michel Lynch
Winery, named after the
Cork-descended Lynch, who
became mayor of Bordeaux.
Here they’re sourcing from
vineyards in the south of
Bordeaux, where the AC
Graves white vineyards
are located. This white
wine is made by blending
predominantly Sauvignon
Blanc with Sémillon. Bordeaux
Sauvignon Blanc gets much
CHARDONNAY AND riper and more luscious than
Loire Sauvignon. Add a little
PARELLADA Tomás’ picks Sémillon and you get a rich,
nutty, creamy and occasionally
Miguel Torres, the doyen of buttery white wine that is one
Spanish ne wine making, o ers of the nest matches for ham,
a take on Burgundy in his Gran especially the edge slices.
Viña Sol. The nest French oak
is used to age large portions of
this wine. The result is a wine Torres Gran
with touches of super-ripe Viña Sol Michel Lynch
peach, ickers of deep richness, Penedes Cellar Select
Catalunya,
a creamy hint, light vanilla and Spain 2015, White, Bordeaux
