Rice pudding with
jam sauce
SERVES 4
300ml milk
300ml cream
2 tbsp caster sugar
1 vanilla pod, split in half lengthways
butter, for greasing
50g short grain pudding rice
pinch of grated nutmeg
FOR THE JAM SAUCE
1 jar of Moran’s Blackcurrant
and Guinness Jam
50ml water
Put the milk, cream, sugar and split vanilla
pod into a saucepan. Bring to the boil, then
turn o the heat. Set aside for 15 to 30
minutes to infuse.
Meanwhile, preheat the oven to 180°C/gas
mark 4. Grease a 1 litre ovenproof pudding
dish generously with butter.
Put the rice in the greased baking dish and
strain the milk through a ne-mesh sieve
over the top. You can wash and dry the
vanilla pod and save it for another use. Stir
to combine, then grate a pinch of nutmeg
Favourite over the top. Bake in the oven for 1½ hours,

Moran’s Mega Jam
