Vegan Sausage Sambo With Vegan Mayo

  • 2 slices Bread
  • 2 - Linda McCartney's Vegetarian Sausages
  • 1 pinch Olive Oil
  • 1 handfull SuperValu Rocket Leaves
  • 1 - SuperValu Tomato
  • 1 tbsp Vegan Mayonnaise
  • 1 tbsp Vegan Tomato Ketchup


  1. Heat the oil in a non-stick frying pan set over a medium heat. Add the sausages and cook until they’re golden brown and smell amazing. Remove from the pan and slice the sausages in half lengthwise.
  2. Spread the ketchup on one slice of bread and the vegan mayo on the other. Put the sausages on the bottom slice of bread, then layer up with tomato slices and the cos or rocket. Top with the other slice of bread and enjoy cold or toasted.
