The famous Waldorf salad was named after the hotel it was created in, the Waldorf Astoria in New York. It was actually created by the maître d’hôtel, not the chef, and is generally made from fresh apples, celery, grapes and walnuts dressed in mayonnaise and served on baby gem lettuce.

Ingredients

  • 2 - Celery stalks, sliced
  • 1 tbsp Cider Vinegar
  • 1 tsp Honey
  • 0.5 zest Lemon
  • 1 tbsp Lemon Juice
  • 4 tsp Mayonnaise
  • 2 tsp Olive Oil
  • 1 pinch Pepper
  • 1 pinch Salt
  • 8 - SuperValu Baby Gem Lettuce leaves
  • 1 tbsp SuperValu Fresh Parsley Flat Leaf chopped
  • 50 g SuperValu Goodness Walnuts chopped
  • 1 - SuperValu Granny Smith Apples cored and hopped
  • 600 g Turkey Breast cut into 4 escalopes

For the Dressing:

  • 100 ml Natural Yogurt

Method

  1. Preheat the griddle pan to a medium heat.
  2. Rub both sides of the turkey escalopes with the olive oil and season with the lemon zest and some salt and pepper. Place on the griddle pan and grill for 3 to 4 minutes on each side, until cooked through.
  3. To make the dressing, combine the yogurt, cider vinegar, lemon juice, mayonnaise and honey in a bowl and season with salt and pepper.
  4. Place the lettuce leaves in a large serving bowl with the celery, apple and walnuts. Add the yogurt dressing and toss gently to combine, then divide between four serving plates.
  5. When the turkey is cooked, cut into slices, place on top of the salad and garnish with the parsley.
