These turkey meatballs can be served as a delicious midweek supper with rice, pasta or potato on your training days or simply on their own with some vegetables if you don't need the extra carbs.

Ingredients

  • 1 pinch Black Pepper
  • 1 - Fresh Egg beaten
  • 2 cloves Garlic crushed
  • 1 tsp Ground Cumin
  • 0.5 - Lime zest only
  • 0.5 tsp Paprika
  • 0.5 - Red Onion finely chopped
  • 1 pinch Salt
  • 0.5 tsp SuperValu Dried Mixed Herbs
  • 2 tbsp SuperValu Extra Virgin Olive Oil
  • 1 tbsp SuperValu Tomato Purée
  • 500 g SuperValu Turkey Mince

For the Tomato Sauce

  • 200 g Cherry Tomatoes halved
  • 400 g Chopped Tomatoes halved
  • 2 cloves Garlic finely chopped
  • 0.5 tsp Ground Cumin
  • 1 tbsp Olive Oil plus extra for drizzling
  • 1 - Onion diced
  • 1 tsp Paprika
  • 0.5 - Red Chilli deseeded and finely chopped
  • 3 - Red Pepper or yellow peppers, chopped
  • 100 ml Water

Method

  1. Preheat the oven to 180oC/gas mark 4.
  2. To make the sauce, warm the oil in a non-stick pan set over a low heat. Add the peppers and onion and sauté for 5 minutes, then add the garlic, chilli, paprika, cumin and some salt and pepper and continue to sauté on a low heat for 2 minutes more. Add the chopped tomatoes, cherry tomatoes and water and mix to combine, then turn the heat down to a low simmer and let the sauce cook for about 20 minutes to reduce a bit. Pour the sauce into a baking dish.
  3. To make the meatballs while the sauce is simmering, combine all the ingredients in a bowl, then roll the mixture into balls. Arrange the meatballs across the tomato sauce in the dish, then drizzle with olive oil and bake in the oven for 20 minutes, until the meatballs are completely cooked through.

Tip: If you're a fan of heat, add some chopped fresh chilli to give the dish a spicy kick.
