Toasted Baguettes with Lemon and Herb Turkey and Tomato Salsa

Tomato Salsa
1 - Red Onion
finely diced

3 - SuperValu Tomato

Method
Lemon & Herb Turkey
Cut each turkey steak into 2 long strips. Place the turkey steaks into a large mixing bowl with the oil, dried mixed herbs, chilli powder and lemon zest and mix well. Leave to marinate for 2-3 hours if possible.
Heat a large pan and quickly cook the turkey steaks for 4-5 minutes each side until golden brown and cooked through to the centre.
Slice the baguettes horizontally and place under the grill until lightly browned. Spread with a little mayonnaise and then neatly arrange the turkey strips on top and a generous spoon of the tomato salsa on top of that.
Tomato Salsa
Very simply just mix everything together for the salsa in a small bowl.
Season lightly with some salt and pepper and store in the fridge until required.
