Quick and easy Thai Green pork curry from Bord Bia.

For the main
1 - Black Pepper

1tbspThai Green Curry Paste
For the spicy cucumber salad
2 - Cucumber
seeds removed and sliced
1tbspFish Sauce
or soy sauce
1tbspLemon Juice
1tbspOlive Oil
1 - Red Chilli
sliced
3 - Shallots
sliced
1tbspSugar
To garnish
1handfullBeansprouts
1 - Lime
cut into wedges
1 - Red Onion
chopped
1handfullSuperValu Fresh Basil
roughly torn
1handfullSuperValu Fresh Coriander
roughly torn

Method
Heat the oil in a large pan over a medium heat. Sauté the onion for about five minutes until softened.
Stir in the curry paste and cook for a moment or two. Add the coconut milk and simmer for 2-3 minutes. Season the pork with salt and black pepper and add it to the pan along with all the remaining ingredients.
Stir well, cover and simmer gently for 5-7 minutes until the pork is cooked. The amount of time depends on how thin the strips of pork are.
To make the Spicy Cucumber salad: mix the cucumber with all the other ingredients.
To serve: Divide the curry between four plates or bowls and garnish with the lime, beansprouts, basil, coriander, scallions and red onion. Serve with the Spicy Cucumber Salad and rice.
