This Thai inspired dish is easy, healthy and delicious.

  • 200 g Chicken Breast chopped
  • 125 g Greek Yoghurt
  • 1 - Lime zest and juice
  • 1 tsp Rapeseed Oil
  • 1 small Red Onion finely diced
  • 1 small Red Pepper finely diced
  • 1 medium SuperValu Carrot grated
  • 1 handfull SuperValu Fresh Coriander leaves, roughly chopped
  • 25 g SuperValu Goodness Cashew Nuts crushed
  • 8 - SuperValu Little Gem Lettuce leaves
  • 2 tsp Thai Red Curry Paste


  1. Warm the curry paste and oil in a large frying pan set over a medium heat. Add the chopped chicken and lime zest and fry for 10 minutes, until the chicken is light brown and cooked through. Remove from the heat and leave to cool.
  2. Meanwhile, put the lime juice, yogurt and coriander in a large bowl and mix together well. Add the cooled cooked chicken to the bowl and stir to coat.
  3. To assemble the cups, spoon the chicken into the lettuce leaves. Top with some onion, pepper and carrot and sprinkle with crushed cashew nuts.
