  • 100 g Carrots cut into chunks
  • 1 tsp Chilli Powder
  • 0.5 tsp Coriander Seed
  • 60 g Frozen Peas
  • 2 cloves Garlic crushed
  • 1 tbsp Ground Cumin
  • 1 - Onion grated
  • 1 tbsp Rapeseed Oil
  • 60 g SuperValu Baby Spinach
  • 0.5 tbsp SuperValu Fresh Ginger grated
  • 150 g SuperValu Potatoes cut into quarters
  • 125 ml SuperValu Tomato Passata
  • 0.5 tsp Turmeric
  • 100 ml Vegan Vegetable Stock
  • 120 g Wholegrain Rice


  1. In a pot of boiling water, add the wholegrain rice and cook until light and fluffy.
  2. Heat oil in a wok and then add cumin and fry until it sizzles, then add onion and cook until mixture is soft and golden.
  3. Add turmeric, coriander, chilli powder, ginger and garlic and stir and cook for a minute. Then add the passata and stir. Now add stock, carrots and potatoes.
  4. Cook for 15 minutes until vegetables are tender, add the peas and baby spinach and cook for a further 2 minutes.
