  • 150 g Caster Sugar
  • 2 - Cucumber approximately 600g
  • 1 small Onion halved and thinly sliced
  • 1 tsp Sea Salt
  • 100 ml SuperValu White Wine Vinegar or cider vinegar


  1. Thinly slice the unpeeled cucumbers and put in a bowl with the other ingredients. Toss well. 
  2. Refrigerate for 2 to 3 hours, stirring occasionally, until the cucumbers have softened and released their juices into the pickling mixture.
