Ingredients

  • 1 tsp Black Pepper
  • 1 - Carrots chopped
  • 1 - Eggs white only
  • 0.25 - Five Spice Powder
  • 2 cloves Garlic chopped
  • 1 tsp Light Soy Sauce
  • 1.5 tsp Plain Flour
  • 1 tbsp Rapeseed Oil
  • 1 - Red Pepper deseeded and chopped
  • 1 tbsp Rice Wine Vinegar
  • 2 tsp Sugar
  • 1 tbsp SuperValu Cornflour
  • 1 tsp SuperValu Cornflour blended with 1 teaspoon water
  • 2 tsp SuperValu Fresh Ginger finely chopped
  • 2 - SuperValu Quality Irish Pork Chops cut into strips
  • 2 - SuperValu Scallions chopped
  • 1 tsp SuperValu Tomato Purée
  • 175 ml Vegetable Stock made with boiling water
  • 90 g Wholegrain Rice

Method

  1. In a pot of boiling water, put the rice and cook until light and fluffy.
  2. In a medium bowl beat the egg white with a fork until slightly frothy. Beat in the five spice powder, 1 tablespoon corn flour, flour and pepper.
  3. Stir in the pork so that each piece is coated.
  4. To make the sauce mix the soy sauce, vinegar, sugar, tomato purée, 1 teaspoon cornflour blended with water, and the stock and set aside.
  5. Place the oil in a wok on medium to high heat. Add in the pork cubes and stir fry for about 5 minutes until the pork is no longer pink.
  6. Now add the garlic, ginger, spring onion, peppers and carrots and stir fry for 2 – 4 minutes.
  7. Now pour in the sauce and continue to cook until vegetables are tender and pork is cooked through.
