Frittatas are quick and easy to make for breakfast, lunch, dinner or even as a snack.
1. Preheat the oven to 190°C/gas mark 5.
2. Place an ovenproof non-stick frying pan on a high heat. Add the oil and swirl it to cover the base of the pan. Add the onion, peppers and garlic and cook for 2 minutes, then add the kale, spinach, paprika, cumin and a pinch of salt and pepper and cook for 2 minutes more.
3. Spread the ingredients evenly around the pan, then pour over the beaten eggs. Scatter the cheese on top and transfer to the oven for 5 to 10 minutes, until the egg is set and fully cooked.
4. Slide the frittata out of the pan onto a chopping board and cut into wedges to serve.
Tip: If you like your food spicy, you can add some chopped fresh chilli or a pinch of chilli powder when seasoning your frittata.
