Ingredients

  • 1 tsp Bread Soda
  • 75 g Dried Apricots chopped
  • 2 tbsp Milk
  • 450 g Plain Flour
  • 75 g Sultanas
  • 350 ml SuperValu Buttermilk
  • 1 tsp SuperValu Salt

Method

  1. Preheat the oven to 170C/325F/Gas Mark 3
  2. In a large bowl, sieve the plain flour and the bread soda, and add the salt, apricots and sultanas.
  3. Pour in the buttermilk and combine until soft “sticky” dough is achieved.
  4. Transfer the dough onto a well-floured work surface and kneed for about a minute or two.
  5. Shape the bread into a round shape and transfer on a floured baking tray.
  6. Brush the bread with a light coating of milk.
  7. Bake for 45 - 55 minutes or until the bread sounds hollow when tapping the bottom.
  8. Remove from the oven and cool down on a rack.
