Spicy Baked Eggs with Beef and Beans

This is a healthy, tasty and filling mid week meal.

  • 1 head Broccoli chopped
  • 4 - Eggs
  • 5 - Mushrooms chopped
  • 1 - Onion chopped
  • 1 tin Organic Cannellini Beans (400g) drained and rinsed
  • 2 - SuperValu Chillies one red and one green, deseeded and finely chopped
  • 1 tbsp SuperValu Extra Virgin Olive Oil
  • 50 g SuperValu Mature Cheddar Cheese or mozzarella, grated
  • 500 g Tomatoes chopped
  • 300 g lean minced beef


  1. Preheat the oven to 200oC/gas mark 6.
  2. Heat the olive oil in a large ovenproof frying pan over a medium heat. Add the beef and brown for 5 minutes, then add the onion, broccoli, chillies and mushrooms and continue to cook for a further 5 minutes. Stir in the beans and chopped tomatoes and cook for 2 minutes more.
  3. Create 4 wells in the mix and carefully crack an egg into each well. Season with salt and pepper (or any of your favourite spices) and transfer the pan to the oven to cook for 5 minutes.
  4. Remove the pan from the oven and scatter over the grated cheese, then return to the oven and cook for 5 minutes more, until the eggs are set and the cheese has melted.
