Ingredients

  • 1 - Banana
  • 100 g Coconut Flour
  • 1 tbsp Coconut Oil
  • 1 tub Fresh Blueberries to serve
  • 3 - Fresh Egg
  • 1 tsp Gluten Free Baking Powder
  • 100 g Gluten Free Pure Porridge Oats
  • 4 tbsp Honey to serve
  • 2 tbsp Natural Yogurt to serve
  • 2 - SuperValu Fruit Pots to serve
  • 100 ml SuperValu Protein Milk
  • 1 tsp Vanilla Extract

Method

  1. To make the batter, combine the oats, coconut flour and baking powder in a small bowl, then place in a food processor along with the eggs, banana, milk, and vanilla extract. Pulse to combine until a smooth batter is achieved.
  2. Melt the coconut oil in a non-stick pan over a medium heat, then ladle some of the batter into the pan. After 1 minute, flip the pancake and cook for a further minute. Repeat with the remaining batter.
  3. Roll up the pancakes and serve with the fruit pots, natural yogurt, fresh blueberries and a drizzle of honey.
