To make the batter, combine the oats, coconut flour and baking powder in a small bowl, then place in a food processor along with the eggs, banana, milk, and vanilla extract. Pulse to combine until a smooth batter is achieved.
Melt the coconut oil in a non-stick pan over a medium heat, then ladle some of the batter into the pan. After 1 minute, flip the pancake and cook for a further minute. Repeat with the remaining batter.
Roll up the pancakes and serve with the fruit pots, natural yogurt, fresh blueberries and a drizzle of honey.
