Salmon and Creme Fraiche Soup

Salmon soup is a clever way of getting kids to eat some fish, as the fishy texture is lost in the blended soup.

  • 1 - Black Pepper
  • 30 g SuperValu Butter
  • 3 tbsp SuperValu Crème Fraîche
  • 1 tbsp SuperValu Fresh Dill Chopped
  • 300 g SuperValu Fresh Salmon Fillets Skinned and Diced
  • 2 cloves SuperValu Garlic Crushed
  • 1 - SuperValu Lime Zest and Juice
  • 1 - SuperValu Onion Sliced
  • 4 - SuperValu Rooster Potatoes Peeled and Diced
  • 1 - SuperValu Salt
  • 400 mls Vegetable Stock
  • 100 mls White Wine


  1. Melt the butter in large pan over a medium heat. Add the onion and garlic and cook for 2 minutes, until just starting to soften. Add the potatoes and salmon.

  2. Pour in the vegetable stock and white wine and bring to the boil. Reduce the heat and simmer for 20 minutes, until the potatoes have softened.

  3. Blitz the soup until smooth with a hand-held blender. Stir in the crème fraîche and dill and season with the lime juice and some salt and pepper. Just before serving, stir in the lime zest
