Use pesto as a sandwich spread, to liven up grilled chicken or fish or as a quick and easy pasta sauce.
Blitz the nuts in a food processor with a small amount of the olive oil.Leave them as smooth or as textured
as you wish.
Add the rocket and blitz again.Gradually add the rest of the olive oil until the pesto reaches your desired
consistency.
Add the cheese, if using, and squeeze in some fresh lemon juice to taste.
Pour into cooled sterilised jars. Once opened, store in the fridge and use within one month.
