Roasted Pepper Cornbread Roasted Pepper Cornbread
This gluten free recipe is a quick and versatile dish - substitute the peppers or corn for other seasonal vegetables. The buttermilk in this recipe makes for a lighter cornbread than the traditional American one. I used SuperValu essentials rectangular roasting tin (34.5 x 24 x 5.5cm). No need to line the tray, just brush with rapeseed oil.

Ingredients

  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2 tbsp Caster Sugar
  • 3 ears Corn on the Cob
  • 3 - Fresh Egg
  • 150 g Gluten Free Self-Raising Flour self raising
  • 1 - Green Pepper sliced
  • 1 tsp Paprika (optional)
  • 300 g Polenta
  • 2 - Roasted Red Peppers sliced
  • 100 g SuperValu Butter melted and cooled
  • 400 ml SuperValu Buttermilk
  • 1 tbsp SuperValu Fresh Thyme chopped
  • 1 tsp SuperValu Salt

Method

  1. Brush pan with oil.
  2. Mix the flour, polenta, sugar, fresh corn, baking soda, baking powder, salt, thyme and paprika, if using, in a large mixing bowl.
  3. Add the butter and buttermilk, stir well.
  4. Then add the eggs one by one mixing well after each addition.
  5. Pour into the baking tray and top with peppers and corn, bake for 25 minutes.
  6. Cool in tray then cut into squares making sure each slice includes peppers and corn.
