Makes 2 x 350g Jars of Chutney. Try this very versatile chutney on burgers or as a side to a salad.

Ingredients

  • 500 g Cherry Tomatoes halved lengthways
  • 1 - Red Onion finely chopped
  • 200 g SuperValu Brown Sugar
  • 1 tsp SuperValu Dried Thyme
  • 2 cloves SuperValu Garlic finely chopped
  • 125 ml SuperValu White Wine Vinegar
  • 1 pinch SuperValu Whole Black Peppercorns

Method

  1. Place the tomatoes, onion, garlic, sugar, vinegar and thyme in a small saucepan.
  2. Bring to the boil over medium heat.
  3. Reduce the heat to medium–low.
  4. Simmer, stirring occasionally, for 25–30 minutes, or until the mixture thickens.
  5. Season with salt and pepper.
  6. Set aside to cool.
  7. Transfer to a sterilised glass jar and place the lids on top.
