Quinoa and Brown Rice Salad

  • 100 g Brown Rice
  • 2 tbsp Cider Vinegar
  • 100 g Quinoa
  • 1 - SuperValu Carrot Peeled into Ribbons
  • 1 tbsp SuperValu Fresh Chives Chopped
  • 20 g SuperValu Goodness Flaked Almonds
  • 4 tbsp SuperValu Olive Oil
  • 1 - SuperValu Orange Zest and Juice
  • 4 - SuperValu Semi Sundried Tomatoes Thinly Sliced
  • 1 tbsp Vegan Sweet Chili Sauce


  1. In separate covered pots, boil the quinoa and brown
    rice as per the package instructions. Drain well and set
    aside to cool completely.

  2. In a large bowl, mix the orange juice and zest with
    the olive oil, cider vinegar and sweet chilli jam. Season with salt and pepper.

  3. Add the rice, quinoa, sun-dried tomatoes, carrot
    ribbons and flaked almonds to the bowl and toss to combine. Just before serving, stir in the chopped chives. Serve immediately.
