Portobello Pizzas Portobello Pizzas
Portobello Mushrooms are a great base to this vegetarian dish, you could add some bacon pieces or chicken as a non vegetarian dish.

  • 1 tbsp Balsamic Vinegar
  • 100 g Cherry Tomatoes halved
  • 4 - Portobello Mushrooms
  • 1 - Red Onion very thinly sliced
  • 1 - Red Pepper very thinly sliced
  • 0 - SuperValu Fresh Basil
  • 100 g SuperValu Mature White Cheddar Block
  • 1 tsp SuperValu Olive Oil
  • 0 - SuperValu Salt


  1. Remove the stalks from the mushrooms and lay gill side up on a baking tray.
  2. Drizzle with a little oil and place under a preheated grill for 4 minutes on each side.
  3. Heat a pan and add some oil, add the cherry tomatoes, red onion, red pepper and balsamic vinegar and cook for 3-4 minutes until softened.
  4. Add a spoonful of mixture onto each mushroom.
  5. Top with some grated cheese and return to the grill for 3-4 minutes until browned and bubbling.
