Method
Bring the beef and vegetable stocks to the boil with the star anise, cinnamon stick, cardamom and grated ginger. Simmer for 30 minutes, covered, then remove the spices from the broth.
Add the sliced beef and rice noodles and continue to simmer for 4 minutes. Just before serving, add the spring onions, chilli, lime juice, coriander and mint. Stir and serve straight away.
