If you have leftovers from a Sunday roast chicken, you'll be set for lunches or suppers for days afterwards. Check out the SuperValu website for my two other chicken wrap recipes, perfect for kids' school lunchboxes but tasty enough for a packed lunch for the office too. Why not make a different wrap each day to keep things interesting?

Ingredients

  • 4 tbsp Light Mayonnaise or 0% fat natural yogurt
  • 4 - Sun Dried Tomatoes in Oil finely chopped
  • 1 handfull SuperValu Baby Spinach
  • 200 g SuperValu Free Range Whole Chicken roasted, finely chopped (leftovers)
  • 1 tbsp SuperValu Pesto
  • 2 - Wholewheat Wraps

Method

  1. Place the mayonnaise, pesto and sun-dried tomatoes in a medium-sized bowl and mix together until thoroughly combined. Add the chicken and stir until it's evenly coated in the mayonnaise. Place a wrap on a cutting board and spread the chicken over it, then scatter over some baby spinach leaves. Roll up tightly and cut in half on the diagonal, then pack into an airtight container or ziplock bag for lunch.
  2. Pack the wrap with fresh fruit, such as a sliced apple, a peeled ad segmented clementine, a small banana or handful of grapes, a yogurt pot for the dairy element of the lunch and a bottle of cold water or unsweetened fruit juice.
